When crews arrived, the vehicle was upside down in a ditch. One person had been released before the fire service arrived.
A third engine was called to help and fire crews worked alongside Ambulance Paramedics and the Police came up with a plan to extricate the person still within the vehicle.
A spokesman for Devon and Somerset Fire and Rescue Service said: "We used a triple extension ladder, 2 general purpose lines, stabilisation equipment, small tools, lighting and a stretcher to remove the casualty from the vehicle.
"The casualties were conveyed to hospital by Ambulance and duty of care of the scene was left with the Police."
